Ingredients: Serve 4
750g/1.5lbs lean minced Manx beef
1 large onion, peeled and finely chopped
2 carrots, peeled and finely chopped
2 cloves garlic, peeled and crushed.
2 tbsp tomato ketchup          
1 beef stock cube
Good dash of Worcestershire sauce      
Glass dry sherry
Lots of mashed potato made with Manx butter and cream

Manx Made Lancashire Hotpot

Ingredients: Serves 4
8 Manx organic lamb chops or 1k/2lbs best end of neck cut into pieces
Optional 4 lambs kidneys, halved and cored
2 large onions, peeled and sliced
600ml/1pt lamb stock
1 tsp each: mixed herbs and dried rosemary
700g/1.5 lbs Manx potatoes, thinly sliced

Ingredients: Serves 4
500g/1lb lean Manx pork, leg steaks or fillet, finely sliced
2 cloves garlic, peeled and crushed
Small piece of ginger, grated  
2 heads pak choi, sliced into strips, 100g/4oz bean sprouts
Dressing:
1 tbsp dry sherry
2 tbsp sweet chilli sauce,
1 tbsp sesame oil
Fresh lime and coriander for serving
