Pork Stir Fry

Ingredients:  
Serves 4
500g/1lb Manx pork fillet or trimmed and cubed shoulder
1 small onion, peeled and roughly chopped
1 red pepper, deseed and sliced
50g/20z mange tout
100g/8 oz broccoli trimmed and blanched
1 inch grated fresh ginger  
Dressing: 1 tbsp each Hoisin sauce, dry sherry, sesame oil

Springtime Marinaded Pork

Ingredients:  
Serves 4
8 thin Manx pork loin chops or leg steaks  
Marinade:
1 tsp chilli paste
1 tsp ground cumin
1 tsp dried oregano
1 tsp soft brown sugar
2 cloves garlic, finely crushed
Juice and grated zest of one large orange
1 tbsp olive oil for cooking

1 tsp each ground cinnamon and paprika

1 onions, peeled and finely sliced
1 large potatoes, peeled and cubed
2 eating apples, peeled cored and sliced
Half red pepper, de-seeded and sliced
Half tsp ground cinnamon
1 tin of cider
4 fresh sage leaves
