Springtime Marinaded Pork
Ingredients: Serves 4 8 thin Manx pork loin chops or leg steaks Marinade: 1 tsp chilli paste 1 tsp ground cumin 1 tsp dried oregano 1 tsp soft brown sugar 2 cloves garlic, finely crushed Juice and grated zest of one large orange 1 tbsp olive oil for cooking
Cooking Instructions: Blend the marinade and coat the chops. Cover and leave in the fridge over night for best results. In a hurry, then leave to marinade for 30 minutes. Heat the oil in a large heavy-bottomed pan and cook the pork chops until brown, turning frequently, for about 20 minutes, or grill for about 10 minutes aside until nicely browned. Serve with buttered herby rice and a tomato salsa. This marinade will also be great for a summer BBQ VARIATIONS ON A THEME: Aberdeen Angus Beef: Use slices of Manx rump steak instead of the pork. Marinade in 1 tbsp brandy, 1 tbsp French mustard, 1 tsp of dried tarragon or thyme. Grill according to your taste for well done, medium or rare. 3, 5, or 7 minutes a side. Great served with French fries or, in a toasted baguette with salad. Lamb: Use pieces of Manx organic lamb leg steaks. Marinade in 1 tsp ground ginger, 1 tbsp runny Manx honey, squeeze of lemon juice. Pan fry or grill for about the same time as the pork and serve with minted noodles and cucumber in yogurt.
