Pork Stir Fry
Ingredients: Serves 4 500g/1lb Manx pork fillet or trimmed and cubed shoulder 1 small onion, peeled and roughly chopped 1 red pepper, deseed and sliced 50g/20z mange tout 100g/8 oz broccoli trimmed and blanched 1 inch grated fresh ginger Dressing: 1 tbsp each Hoisin sauce, dry sherry, sesame oil
Cooking Instructions: Heat a little vegetable oil in a wok and stir fry the pork cut into thin strips for a couple of minutes until browned. Remove from the wok and keep warm. In the wok stir fry the pepper and onion with the ginger for 2 minutes. Add the mange tout and cook for another minute. Add back the pork and broccoli and cook for another minute before adding the dressing. Heat thoroughly and serve with rice. VARIATIONS ON A THEME: Beef with Bean Sprouts: Use topside or fillet cut into thin strips. Use 2 cloves crushed garlic. Substitute bean sprouts for broccoli and add a dash of hot sweet chilli sauce. Serve over boiled noodles with a handful of deep fried crispy noodles for fun. Lamb with Mushrooms: Use Manx lamb leg steaks in thin strips. Rather than the mange tout and broccoli use a selection of mushrooms added at the end. A dash of Worcestershire sauce will lift this dish to new heights. Serve with fried rice and peas.
